We can cut your lamb in many different ways. Below is a guide to the different cuts. Please feel free to contact us to discuss your specific requirements.

 

2 Legs.  (Each leg weighs between 2 & 3 kgs and will feed 6-10) The most popular cut is to have the leg halved. This will produce 2 joints, one of which includes the shank and will normally feed 3-4, the other is the top leg running to the chump. This is a very meaty joint and will feed 4-6. The  joint can be made smaller by taking off 1 or 2 large leg steaks for barbecue or frying.

 2 Shoulders with neck fillet. Each shoulder weighs between 2 & 3 kgs and will feed 6 -10 The most popular cut is our easy carve shoulder with the blade removed. If the fillet is also removed it will feed 4-6 or with the fillet included it will feed 6-8 (This joint can also be stuffed and can feed up to 10. Alternatively the shoulder can be trimmed to produce a smaller joint with or without the fillet to feed 4-6. The trimmings can then be used to produce mince or casserole. The fillet is used for casseroles.

 12 Cutlets or 2 whole racks.  The cutlets can either be chopped indi vidually or left whole as a rack of 6 which in turn can be trimmed as a guard of honour with 3 or 6 cutlets to each side.

 12 Loin Chops or 2 whole loin joints.  The loin can be chopped individually or left as a whole loin joint. Each bone in the joint will be cut for ease of carving and the joint can be made up from 2 – 6 chops.

 4 Chump chops/steaks or 2 Chump joints. The chump can be left whole as a small joint to feed 1-2 or cut into individual chops or the bone can be removed to produce chump steaks which is the most popular option.

 2 Breasts.  These can be left whole, cut into individual spare rib chops for barbecuing or can be boned and rolled ready for stuffing. Alternatively we can use the breast to produce mince.

 2 Kidneys (if collected). The kidneys need to be eaten or frozen immediately and are not included if the lambs are sent by courier.

Our beef is produced fresh every 2 months. and normally available frozen between these times.

For your information a 15kg box should fit into 1 standard sized tray of a normal upright freezer.

 

Typically we hang our beef for 3 ½ weeks for maximum taste and tenderness. Please see our About our cattle for more information.
